I'd like to rename the "finish" button, is it possible ?
(I am using the workflow feature which bring so much flexibility, the only drawback is to have "finish" in the middle of the form)

Definitely! You can update the UI Translations with these instructions.
The key that you'll want to translate for the FINISH button is form.entry.finish.button.
