One of my requirements for my project is to produce a data schema in Excel
and SQL/vsd. Is this something that can be easily generated? What steps are
needed to accomplish this?

Yes, data can be exported to excel and SQL. You can use the built in export
functionality

for excel, and for more advanced use cases (including syncing to SQL) use
the data export tool
